Crunchy Walnut and Vegetable Pasta Bake

Happy Tuesday everyone from Melbourne, Australia (middle of winter).

Since the big, baggy jumpers and jackets are on, I am deciding that everything I eat should be potatoes or pasta. Or both. All at once. Its cold and I just cannot stop eating. I need comfort and warmth and endeavour to continue to come up with diverse and unique recipes to keep satisfied.

This crunchy walnut and vegetable pasta bake came up a treat and was not only filling but full of veggie vitamins and minerals. Make a big batch to eat throughout the week. Pasta dishes always taste better over the next few days. Hope you enjoy!

STEP 1 – Gather your ingredients. Pasta of your choice (I used spirals – the whole packet), 2 cans of diced tomatoes, 5 teaspoons of tomato paste, 6 garlic cloves, 1 onion, punnet of sliced mushrooms, a can of tender pieces or mock mince, 3 stalks of celery, 1 large carrot, 6 stems of spinach, garlic powder, salt, pepper, mixed Italian herbs, a block of soy cheese, almond meal and 2 big handfuls of walnuts.

STEP 2 – Chop up the onion and mince the garlic and sauté until fragrant and browning lightly. Add the mushrooms and cook on low heat until the juice starts to escape them. Then add the tender pieces or mock mince and cook for a few minutes. Cook the pasta in another pot.

STEP 3 – Add your walnuts and stir around for a few minutes. Then add your 2 cans of diced tomato’s, tomato paste, salt, pepper, Italian herbs and spices, garlic powder and suit to your taste. Mix and let simmer while you prepare your carrot, celery and spinach.

STEP 4 –  Drain your pasta when cooked to your liking into a lightly olive oil sprayed baking dish and mix in sauce and vegetables and stir evenly around. Grate half a block of soy cheese into the mix and then mix evenly around.

STEP 5 – Grate the remainder of the soy cheese evenly over the top of the dish and then sprinkle almond meal over the cheese. The amount depends on your preference.


STEP 6 – Place into oven at 200 degrees and allow to cook for about 45 minutes or until the cheese and almond meal and brown and crisp. Serve alone or with a side of your choice.
