It is nearly Friday woooooooo hooooooooo 🙂 This weekend for me is all about resting, sleep, good cooking, fitness, learning, friends and family.
Whipped up a delicious choc – mint chia mousse the other day and must share it with you. It is a healthier alternative to traditional chocolate mousse and uses natural, organic ingredients. Hope you enjoy this creamy, healthy version.
STEP 1 – Gather your ingredients. For this I used avocado, cacao powder, extra virgin coconut oil, chia seeds, chocolate pea protein, agave nectar and mint leaves.
STEP 2 – Put the avocado and a few tablespoons of chia seeds in a blender with a cup of water
STEP 3 – Add 4 tablespoons (or more if you like a richer flavour) of cacao powder, 2 heaped tablespoons of pea protein (equalling 20g of protein), a tablespoon of coconut oil and a handful of fresh mint leaves.
STEP 4 – Add 4 to 5 teaspoons (more if you enjoy a sweeter flavour) or agave nectar and blend until smooth (adding small amounts of water if needed).
STEP 5 – Put into refrigerator for at least an hour and serve chilled with some fresh mint leaves.
