So I have been cooking up a storm since it is cold and miserable here in Melbourne. Had a few ingredients in the fridge and pantry so came up with some crunchy, cheesy, eggplant bites. Hope you enjoy 🙂
STEP 1 – Chop up half an onion, an eggplant into small cubes and mince 4 cloves of garlic and cook in a pan until soft.
STEP 2 – Mix some chia seeds, almond meal, yeast flakes, salt, pepper and fresh parsley into a separate bowl.
STEP 3 – Let the eggplant mix cool until room temperature. Chop half a block of soy cheese. Add all prepared items into a blender with half a cup of water. Add a tablespoon of no egg mix. This will help all of the ingredients bind well together.
STEP 4 – Add a little bit of flour if required for thickness and roll mixture into balls and coat with wholemeal breadcrumbs.
STEP 5 – Place into oven at 220 degrees and cook for about 30 minutes until brown and crisp. The inside should be soft, moist and cheesy.
