Hello Friday 🙂 Off to celebrate my nans 90th b’day this weekend in the country and cannot wait! Adore the dear old darling! Ok, onto you and the cooking!!
I decided to make a shepherd’s pie as its winter, I’m cold and all I want is POTATOES, POTATOES, POTATOES!!!!! This was simple, delicious and even my meat loving personal trainer and friend (who wants samples of all my vegan cooking) said it was awesome! Changing one mind at a time…… 🙂
Step 1 – I love veggies and always want more added goodness so I decided on mushrooms, carrot, celery and lots of garlic. Chop it all up to how you prefer!
Step 2 – I used a mock mince and lentils for protein and texture.
Step 3 – Add garlic, mock mince, lentils, tin of tomatoes, approx. 5 tsp. of tomato paste, thyme, salt, pepper etc…into your pan and cook up 🙂
Step 4 – While this is simmering along nicely (I just love cooking smells and aromas) prepare the mash potato! I used about 6 potatoes and add Nuttlex light butter, olive oil and lots of garlic. First boil them til soft, add your flavourings and mash to fluffy!
Step 5 – Time to mix all your veggies, mince and lentils together in a baking dish. YUM!
Step 6 – Spread the mash all over the top and add what you like to flavour! I love everything crisp so I added some almond meal, dash of breadcrumbs, yeast flakes and salt and pepper.
Step 7 – Pop in the oven at about 200 degrees and cook for approx. 30 – 45 mins (until the top is nicely browned and crisp). Enjoy with whatever sides you like! I chose peas and wanted it drowned in gravy (I use Massells gravy and add garlic and yeast flakes to it). Turns out really nice!
